You can choose between hulled and unhulled tahini. Hulled are lighter in colour and it’s not covered with kernel, while unhulled is darker in colour compared to hulled because of the presence of its kernel shell. Next thing to choose from is between raw or roasted tahini. Roasted are heated up in a medium heat of skillet until it’s golden brown. Darker in colour, fragrant, and bitter type of tahini.
